For today, you'd grey out / disable [ Today ] as well as [ < ], this should give some indication that it is today. But beyond that most people should know what today's date is. The other typical thing to do is put a feint background circle around the date or give it a different background colour.

In that design you'd have to rely on the hidden menu to get you back to today. You could simply have a 'Today' link to the left of the left arrow, e.g. [ Today ] [ < ] [ 26 ] [ > ] [ Other ], you could then balance that out with the 'other' link that would open a calendar.

This sounds more like a security issue than usability. However I have certainly come across this. If you're a small organisation fulfilling orders for a large organisation (say a University), then their finance department will sometimes refuse to go through your e-commerce system. So then you need to do it on the customers behalf.

@Baronz I guess I'm used to working with analysts for whom pivot tables were their bread and butter. I was taught about pivot tables by them rather than the other way round :) The great thing is the immediate feedback, but I can see how they might be a problem for novice users.
