I would call it deferred response, but a bit of googling doesn't seem to prove my point. Anyway, another real-life example is an instant search mechanism that gives you a fraction of a second to enter another character before it starts hitting the database.

The example is bad because the first column is not included in the alternate coloring, making it rather painfully useless.

My mouse does that too, but in a anti-intuitive manner (probably the same like Logitech's): When I move the mouse up (while pressing the wheel), the scrollbar goes up, so the document scrolls down. It doesn't feel like dragging the document.

+1; the advantage of this solution is that you can add a filter for the left list, so the user can reduce the 100+ items, while the right list still shows all items that have been selected already.

user unknown: In your example, the answers are not phrased well, because they assume a possibly wrong reason. It should be "Yes, I like sugar please" / "No sugar for me, thanks"
